HISTORY OF CHINESE CUISINE

The history of Chinese cuisine goes back to the Peking Man and his use of fire and invention of cuisine some 400,000 years ago. Some other accounts and history of Chinese cuisine takes back to Chinese Stone Age, where cultivation of rice and production of noodles, both typical representative of Chinese cuisine as we know it today, are known from archeological findings. The use of chopsticks goes back to Zhou Dynasty; Stir Fried method of cooking and dishes was invented during Tang Dynasty to conserve expensive and scarce fuel. Most famous dishes today were invented during the Qing Dynasty and the early years of the Republic of China.
 

CANTONESE CUISINE

Cantonese cuisine originates from Guangdong province in Southern China, or more precisely, the area around Canton (Guangzhou). Of the various regional styles of Chinese cuisine, Cantonese is the best known outside China. The prominence of Cantonese cuisine outside China is likely due to the disproportionate early emigration from this region, as well as the relative accessibility of some Cantonese dishes to foreign palates. Cantonese cuisine has widely been regarded as the pinnacle of Chinese regional fare, because of the immensity and diversity of the ingredients used and stresses fresh ingredients, natural flavours, stir & deep frying, quick cooking and steaming. There is a Cantonese saying: "We will eat anything on the ground with legs except tables and chairs, eat anything in the sky except airplanes and eat anything that swims except submarine." Further Cantonese saying: "Any animal whose back faces the sun can be eaten".
 

SZECHUAN CUISINE

Szechuan cuisine originates from Sichuan province in Southwestern China which has a reputation for being spicy and flavourful. The common ingredient in Szechuan cuisine is Szechuan Peppercorn. Also common are chilli, ginger, spicy herbs and chilli bean paste. Common preparation techniques include stir frying, steaming and braising. Szechuan cuisine is also known as Szechwan or Sichuan.
